Strawberry Gin Smash

2 oz gin
juice from 1/2 lemon
1 tsp honey
4-5 mint leaves
5 strawberries
2 oz club soda
Muddle strawberries and mint. Add lemon juice, honey, and gin then shake. Top with club soda.

Strawberry Gin Sour

2 oz gin
.75 oz lemon
1 dash of bitters
Large barspoon of strawberry jam (substitute with 2 muddled strawberries and .5 oz simple syrup)

Shake, strain, and serve.

Tangerine Aperol Sour

1.5 oz gin
.75 oz aperol
.75 oz lemon
.5 oz honey syrup
4 tangerine slices
Egg white

Muddle the tangerine slices, add the rest of the ingredients. Dry shake, then add ice. Shake and serve.

Tom Collins

2 oz gin
1 oz lemon juice
.5 oz of simple syrup
